All food preparation areas – restaurants, bars, catering companies, cafeterias etc. must have a grease trap or interceptor as it captures the grease from the kitchen wastewater and traps it before sending it into the sanitary sewer line.

How does a Grease Trap work?

Fats, oils and greases (FOG), which are up to 15% less dense than water, rise to the top of the trap where they accumulate. Food debris will sink to the bottom and the remaining water is then able to flow out to the sanitary sewer.
Grease traps or interceptors need to be serviced and cleaned regularly to operate at peak efficiency and to avoid clogs and pipe damage.
